Veggie Burgers Sizzling in Olive Oil
Howdy Folks! This week’s menu 5 Vegetarian and 2 Meatarians Meals, mostly a similar line up as last week. Gearing up for new additions next week. Nothing like getting a few new recipes down pat before shaking things up again

Saturday June 02
**Hard Hats, Bacon, Roast Vegetables ( I like Canadian Bacon for this) ( marinate tofu in soy sauce for tomorrow)
Sunday June 03
**Curried Tofu, Rice, Mixed Green Salad ( I add mushrooms, marinate the tofu in soy sauce overnight, and slice it 1/4 inch thick, then into bite size pieces not big triangles)
Monday June 04
**Fritata:Potato,Scallion and Goat Cheese, Yeast Rolls, Steamed Broccoli
Tuesday June 05
**Spaghetti with Red Sauce, Garlic Bread, Spinach Salad ( 5 Potatoes baked or microwaved, cool. Store in Refer for Hashbrowns tomorrow)
Wednesday June 06
**Breakfast: Pancakes, Eggs, Toast, Hashbrowns. ( put dry black beans in the crockpot, no heat, to soak overnight)
Thursday June 07
**Bean & Cheese Enchiladas, Queso, Cucumber Slices ( drain beans, add new water, cook 4 hours on low. I like to use my own cooked beans instead of canned)
Friday June 08
**Spinach Cheddar Strata, Roast Cauliflower, Green Beans, Broccoli, and Melon Slices
Saturday June 09
**Veggie Burgers, Raised Wheat Rolls, Sweet Potato Fries ( Quinoa substituted for Bulgar, add 10 sundried tomatoes to bean mixture before processing)
Sunday June 10
**Stuffed Pablano Peppers, Whipped Black Beans, Spinach Salad ( use leftover black beans)
Great Music for Prepping Pablanos…don’t rub you eyes!!
Alternate Meals
** 2 Cheese Fettuccine Garlic Bread, Fruit Salad
** Baked Ziti, Mixed Green Salad, Fruit Shortcake, Whipped Cream

Great Idea Lizanne! I will do that! All the new ones really have me wondering myself! *grin*
You mean you don’t mind being my guinea pig? (teasing) I’m adventurous about new dishes sometimes, but my boys do tend to be kinda picky (my youngest in particular – he hates veggies) so I’d rather do something I know is good.
BTW, I used to do a vegan diet & Chef Beverly had a site (veganchef.com) with great recipes if ya want to check her out… I remember one of her pasta dishes had no sauce yet it was fabulous (a spicy pasta) & my husband and I loved it.
I don’t mind sharing recipes we liked (some we made up), though some of them I might not be able to share right away as we still have a lot of our kitchen stuff in boxes (from our move).
I would LOVE to be your guinea pig! LOL! Thanks for the tip…I am always looking to delve deeper into fresher food choices! Lovely!
